Spiced Pear Rye Loaf

Ingredients

  • 1 Pear, diced skins left on
  • 1 cup wholemeal flour
  • 3/4 cup Rye flour
  • 2 ripe bananas, mashed
  • 4 eggs
  • 3 Tablespoons unsweetened yoghurt
  • 3 teaspoons honey
  • 2 Tablespoons nutmeg
  • 2 Tablespoons cinnamon
  • 2 teaspoons baking powder
  • Extra pear and flaked almonds to top loaf if desired

Method

  1. Preheat oven to 150C (this loaf needs to cook slow due to the Rye flour otherwise you will get a soggy loaf)
  2. Mix all ingredients in a mixing bowl
  3. Pour mixture into a lined loaf tin and cook for 1 hr or until cake skewer comes out clean
